Preheat oven to 400º F. Spray the baking sheet with nonstick cooking spray or spritz with olive oil spray.
Arrange pork chops on the sheet pan.
Add the sweet potatoes and apple wedges to a large bowl. Mix together the olive oil, balsamic vinegar, dijon, salt and pepper in a small mixing bowl and pour over the sweet potatoes and apples. Toss to coat the sweet potatoes and apples and arranged around the pork chops. Pour the remaining marinade over the pork chops.
Bake in the oven until the pork chops are cooked through and a thermometer inserted into the thickest part of the pork chops registers 145º F, about 20 to 25 minutes. Set the oven to broil to caramelize the vegetables, about 3 minutes. Serve immediately.
